- 200 grams pork, thinly sliced
- 2-3 boiled eggs, peeled and halved
- 2-3 cloves garlic, minced
- 2-3 slices galangal
- 2-3 kaffir lime leaves, torn
- 2-3 Thai bird’s eye chilies, crushed (adjust to taste)
- 2-3 tablespoons fish sauce
- 1-2 tablespoons oyster sauce
- 1-2 teaspoons palm sugar (or brown sugar)
- 1/2 cup water
- Fresh cilantro leaves for garnish
Instructions:
- Heat a bit of oil in a pan over medium-high heat.
- Add minced garlic, galangal, kaffir lime leaves, and Thai bird’s eye chilies to the pan. Stir-fry for a minute until fragrant.
- Add thinly sliced pork to the pan and cook until it’s no longer pink and fully cooked.
- Stir in fish sauce, oyster sauce, palm sugar, and water. Allow the sauce to simmer for a few minutes to thicken.
- Add boiled eggs to the pan and gently stir to coat them with the sauce.
