Khao Moo Grob Kratiem Prik Thai

 

Ingredients:

  • 1 cup of pork belly, cut into bite-sized pieces
  • 3-4 cloves of garlic, minced
  • 2-3 Thai bird’s eye chilies, minced (adjust to your spice preference)
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • Vegetable oil for frying
  • Steamed jasmine rice, to serve

Instructions:

  1. Heat a generous amount of vegetable oil in a deep pan or wok over medium-high heat.
  2. Carefully add the pork belly pieces to the hot oil and fry until they are crispy and golden brown. This can take around 10-15 minutes. Be cautious as the hot oil can splatter.
  3. Once the pork is crispy, remove it from the oil and place it on a paper towel-lined plate to drain any excess oil.
  4. In a separate pan, heat a small amount of oil over medium heat and add the minced garlic and Thai bird’s eye chilies. Sauté them until they become fragrant and lightly browned.
  5. Add the oyster sauce, soy sauce, and sugar to the garlic and chili mixture. Stir well to combine the ingredients and let the sauce simmer for a minute or two.
  6. Add the crispy pork belly pieces to the sauce and toss everything together until the pork is well coated with the flavorful sauce.
  7. Serve the Khao Moo Grob Kratiem Prik Thai over steamed jasmine rice.
