Ingredients:

  • 200 grams thin rice noodles
  • 200 grams small prawns, peeled and deveined
  • 2-3 cloves garlic, minced
  • 2-3 Thai bird’s eye chilies, finely chopped (adjust to taste)
  • 2-3 tablespoons vegetable oil
  • 2-3 tablespoons tamarind paste
  • 2-3 tablespoons fish sauce
  • 1-2 teaspoons sugar
  • 1/4 cup sliced shallots
  • 1/4 cup crushed roasted peanuts
  • Fresh cilantro leaves for garnish

Instructions:

  1. Soak the rice noodles in warm water until they are soft, then drain and set aside.
  2. Heat vegetable oil in a pan or wok over medium-high heat.
  3. Add minced garlic and chopped Thai bird’s eye chilies to the pan. Sauté for a minute until fragrant.
  4. Add the peeled prawns to the pan and stir-fry until they turn pink and are cooked through.
  5. Add the soaked rice noodles to the pan and stir-fry for a couple of minutes to combine with the prawns.
  6. Season with tamarind paste, fish sauce, and sugar. Adjust the taste according to your preference.
