Ingredients:
- 200 grams thin rice noodles
- 200 grams small prawns, peeled and deveined
- 2-3 cloves garlic, minced
- 2-3 Thai bird’s eye chilies, finely chopped (adjust to taste)
- 2-3 tablespoons vegetable oil
- 2-3 tablespoons tamarind paste
- 2-3 tablespoons fish sauce
- 1-2 teaspoons sugar
- 1/4 cup sliced shallots
- 1/4 cup crushed roasted peanuts
- Fresh cilantro leaves for garnish
Instructions:
- Soak the rice noodles in warm water until they are soft, then drain and set aside.
- Heat vegetable oil in a pan or wok over medium-high heat.
- Add minced garlic and chopped Thai bird’s eye chilies to the pan. Sauté for a minute until fragrant.
- Add the peeled prawns to the pan and stir-fry until they turn pink and are cooked through.
- Add the soaked rice noodles to the pan and stir-fry for a couple of minutes to combine with the prawns.
- Season with tamarind paste, fish sauce, and sugar. Adjust the taste according to your preference.
- Remove from heat and transfer to serving plates.
- Top with sliced shallots, crushed roasted peanuts, and fresh cilantro leaves.
