Ingredients:

  • 200 grams pork, thinly sliced
  • 2-3 boiled eggs, peeled and halved
  • 2-3 cloves garlic, minced
  • 2-3 slices galangal
  • 2-3 kaffir lime leaves, torn
  • 2-3 Thai bird’s eye chilies, crushed (adjust to taste)
  • 2-3 tablespoons fish sauce
  • 1-2 tablespoons oyster sauce
  • 1-2 teaspoons palm sugar (or brown sugar)
  • 1/2 cup water
  • Fresh cilantro leaves for garnish

Instructions:

  1. Heat a bit of oil in a pan over medium-high heat.
  2. Add minced garlic, galangal, kaffir lime leaves, and Thai bird’s eye chilies to the pan. Stir-fry for a minute until fragrant.
  3. Add thinly sliced pork to the pan and cook until it’s no longer pink and fully cooked.
  4. Stir in fish sauce, oyster sauce, palm sugar, and water. Allow the sauce to simmer for a few minutes to thicken.
  5. Add boiled eggs to the pan and gently stir to coat them with the sauce.
  6. Remove from heat and garnish with fresh cilantro leaves.
