Corn Soup, known as ซุปข้าวโพด (Soup Khao Pod) in Thai, is a comforting and wholesome Thai soup. This delightful dish features sweet corn kernels, tender chicken, and a fragrant broth infused with Thai herbs and spices, making it a beloved Thai comfort food.

Ingredients:

  • Sweet corn kernels
  • Chicken breast, thinly sliced
  • Galangal, sliced
  • Lemongrass, cut into pieces
  • Kaffir lime leaves, torn
  • Fish sauce
  • White pepper powder
  • Coconut milk (optional)
  • Fresh cilantro leaves for garnish

Instructions:

  1. Simmer chicken breast in water until it’s fully cooked, then remove and shred it.
  2. In a pot, bring the chicken broth to a simmer and add sliced galangal, lemongrass, and torn kaffir lime leaves.
  3. Add sweet corn kernels and continue to simmer until they are tender.
  4. Return the shredded chicken to the soup.
  5. Season with fish sauce and white pepper powder to taste.
