Thai-Style Boiled Mung Beans Recipe
Ingredients
- Whole mung beans, 1 cup
- Water, for rinsing and boiling
- Sugar, to taste
- Salt, to taste
- Fresh ginger (optional)
Instructions
- Start by rinsing the mung beans thoroughly under cold water. Continue rinsing until the water runs clear and the beans no longer have a greenish odor.
- In a pot, toast the mung beans over medium heat until they turn golden and become fragrant. This should remove any grassy smell.
- Once toasted, add enough water to cover the beans and bring it to a boil. Reduce the heat to low and simmer until the beans are tender, which may take about 20-30 minutes. Add more water as needed to keep the beans covered. You’ll notice the beans swell and the water level drop as they cook.
- Add sugar (to your desired level of sweetness) and a pinch of salt to the beans. If you like the flavor, you can also add slices of fresh ginger at this stage. Let it simmer until the sugar fully dissolves.
- Remove the ginger (if used) and serve the boiled mung beans as a nutritious and savory dessert or side dish.
