Thai-Style Boiled Mung Beans Recipe

Ingredients

  • Whole mung beans, 1 cup
  • Water, for rinsing and boiling
  • Sugar, to taste
  • Salt, to taste
  • Fresh ginger (optional)

Instructions

  1. Start by rinsing the mung beans thoroughly under cold water. Continue rinsing until the water runs clear and the beans no longer have a greenish odor.
  2. In a pot, toast the mung beans over medium heat until they turn golden and become fragrant. This should remove any grassy smell.
  3. Once toasted, add enough water to cover the beans and bring it to a boil. Reduce the heat to low and simmer until the beans are tender, which may take about 20-30 minutes. Add more water as needed to keep the beans covered. You’ll notice the beans swell and the water level drop as they cook.
  4. Add sugar (to your desired level of sweetness) and a pinch of salt to the beans. If you like the flavor, you can also add slices of fresh ginger at this stage. Let it simmer until the sugar fully dissolves.
  5. Remove the ginger (if used) and serve the boiled mung beans as a nutritious and savory dessert or side dish.
